Made lemon zucchini cupcakes yesterday.
Giant zucchini took over my garden. Not normal, but the result of our weeks spent in Block Island, neglecting my growing things.
What to do? Found this recipe for lemon zucchini cake with a lemon glaze.
Baked them in extra large cupcakes tins and made this macerated strawberry cream cheese frosting to play along.
So have I mentioned I suck at baking? First batch came out custardy. Obviously didn’t translate cooking time correctly. And ran out of sugar
Second batch today. I’ll let you know.
Btw. The first batch was still SUPER yummy. I created something new. Lemon zucchini custards!
