My husband cooks.
I know, those words feel strange in my mouth, but good Lord, he can make a sauce.
Its mellow and sweet and thick and a little bit smokey. Its silky smoothness glides over your tastebuds and then just when you think it can’t get any better, there is a surprise tingle, thanks to the one hot pepper he adds to the pot.
A little different each batch he prepares, the basic ingredients are tomato paste, tomato puree, olive oil, onion, garlic, one hot pepper and meat: sausage, chunks of pork loin, steak bits, really any meat on hand; along with meatballs made from a mixture of veal, pork and beef, with plenty of breadcrumbs, eggs and cheese.
It bubbles for hours filling the house with a dense envelope of Italian cologne, lol!
He won’t share the recipe, I think its his insurance policy on our marriage =)
